Happy Canada Day!

To celebrate Canada Day I made Elderflower Cordial Popsicles with frozen raspberries.  If you freeze the raspberries first, when you chop them into smaller pieces they easily fall apart into tiny segments like pomegranate seeds. Perfect for sprinkling on salad, or into a frozen treat!

Queen's Jubilee

I decided to skip out on the Flotilla yesterday given it was a chilly 12C, pouring down with rain for most of the day, all the bridges were closed to the public (access by invitation only), and the front row seats along the banks had been taken by people who had camped over night!

I am planning on hitting the baton lighting and fire works tonight around buckingham palace though....

Birthday Cakes for Friends

On sunday I made a birthday cake for one of my friends (because that's what friends are for).. Chocolate cake with armaretto mousse interlayer, dark chocolage glazed icing and lightly toasted almond topping. Yummy (even if I did have to make the mousse twice...)
